Late at night, when the kitchen finally slows down, Ginetta Manissero steps out to greet her guests. She smooths her apron, smiles, kisses cheeks, exchanges hugs. Many guests she knows by name. When the plates are cleared and glasses still half full, there’s time to talk. Dining here feels personal—like being among friends.

Located on a bend at the edge of Dogliani Castello,  Il Torchio is both osteria and vineria—and proudly so. Wine plays a starring role: bottles line the entrance and walls, while a glass wine cellar showcases the finest labels from Piedmont.

Behind it lies one of Il Torchio’s best-kept secrets: a small former chapel, lovingly restored and now home to a single round dining table. Frescoed walls, the original altar, even the offering box remain. Dining here is rare—and unforgettable.

Il Torchio is a favorite with locals for birthdays and celebrations. When a cream-topped cake marked “Auguri” appears and music fills the room, the whole restaurant celebrates together. From the first moment, it’s clear: this is dining with friends.

Ginettas cooking is seasonal, regional, and heartfelt. Ingredients come from trusted producers in the Langhe — meat from a local butcher, produce and cheese from nearby farms. The wines, too, grow on the surrounding hills, including the Serafina DoWhatYouLove Wines, which now have a permanent place on the wine list.

A reservation is highly recommended—Il Torchio is often fully booked.
