Dominik Weigand is the one responsible for everything that happens in the cellar. It starts with the grape processing and ends with the delivery to the Restaurants and Bars. In between, however, there are many different steps until the sweet must/mash is in the bottle as a wine; in other words, complete vinification. Dominiks cantina is in La Morra where he was lucky enough to rent Enzo Boglietti‘s old cellar with 2 other small producers. This way, they can share equipment, help each other and exchange ideas.

 

Our collaboration is very unconventional, we have a common vision, but not really an exact concept or concrete plans for how everything should work in the next few years. But it still works, and maybe that’s because we have the same ideals. We want to work in an environmentally conscious manner, preserve habitats for animals and plants and produce good products. We are curious about creative people and enjoy having a large network. It’s a lot of fun to work like this and never gets boring. You won’t get rich with it, but it’s a good life. It’s not about producing tens of thousands of bottles and making a lot of cash, it’s about producing a high-quality product that we can identify with without having a guilty conscience.

The Bocciarda provides the perfect foundation for the land, with plenty of forest around the vineyards. In terms of biodiversity and sustainability, we know that we don’t have to work against nature, but with it.

 

Dominik studied viticulture, oenology and wine management at the BOKU in Vienna. After various internships in Munich, Burgenland and New Zealand, he settled down in the Langhe. He came to the Langhe at the age of 19 after his apprenticeship as a carpenter, when he helped Mauro Veglio with the grape harvest. He was immediately captivated by the Italian lifestyle, the work in the vineyards and the helpfulness of the ‘Langaroli’, and it wasn’t long before his decision was made. He wanted to be a winemaker. Dominik has been employed by Mauro Veglio since 2016, he produces a Barolo with his own Azienda Agricola in addition to the Serafina wines.
